My Grandmother's Salad Dressing

4 slices bacon
1/2 cup onions, minced (optional)
1 tablespoon sugar
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon celery seed
1/3 cup water
1/4 cup vinegar
parsely, minced
 
 
This is my Grandmother's dressing for German Potato Salad, but I use it for Wilted lettuce also.  I think she did too.  This recipe was not written anywhere until I got married and asked her to write out some of my favorite recipes of hers. So, the amounts were guess-timates.

Spinach Salad with Cashews

I love the salad dressing with this recipe. It uses part of the drippings from the cooked bacon. Yum!

1 pound Fresh Spinach
8 slices Bacon
1 1/2 teaspoons Dijon mustard
1/2 teaspoon Sugar
1 small Onion, grated
1 cup Mayonnaise
1/4 cup Olive Oil
1/4 cup White Vinegar
1/4 cup Parmesan cheese, grated
1/2 pound Fresh Mushroom, sliced
2 cups Whole Cashews
Parmesan Cheese for topping

For dressing, fry bacon, reserving 2 tablespoons drippings. Crumble bacon and set aside. Add olive oil, vinegar and 1/4 cup Parmesan to drippings, mix well. Put mayonnaise in a separate bowl and add the bacon mixture, stirring while adding. Assemble desired ingredients for salad and dress.

Walking, listening to my ipod shuffle

I have my ipod shuffle set to 'random'. This afternoon it seemed to shuffle between Leonard Cohen and Berlioz Requiem.  I know I've got more tunes on that shuffle!  The random generator algorithm on that thing is poor!
