Pepper Cheese Biscuits

Here's a cheese biscuit recipe I use a lot. I use a cup of flour and 2 Tablespoons shortnening, but more or less of the rest of the ingredients, depending. Have you ever tried using lard for the shortening in biscuits - really bad for you, but makes tender biscuits.

1 cup Soft White Flour
1 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1/4 teaspoon Kosher salt
1/4 teaspoon Cayenne or Chile pepper
2 tablespoons Cold Butter, unsalted
1/2 cup Cheddar cheese, grated
1/2 cup Buttermilk

Bake at 425F for 15 minutes.
